Persimmon Pudding

Yields: 2 cups
Prep: 5 min.
Total Cook Time: 8 min.
Ingredients:

3 Fuyu persimmons (peeled, seeds removed)

3 cups baby spinach

1 ripe banana

 

Instructions:

Put all ingredients into blender, or food processor,  and blend until smooth.  Refrigerate for 30 min. before serving.
